Gluten Free Satay Chicken Stir Fry Recipe | Takeaway Style

So if you know us quite well you would know that when diagnosed as Coeliac Wehan and I got home and started listing all of the things that I’d never be able to eat again, only for me to start crying with the sudden realisation that I’d be losing a lot of my favourite foods. One of the things that popped up in that list was satay chicken stir fry from our local Chinese restaurant. I ate that satay chicken with my mom and dad when I was a teen, and I continued eating it until I was diagnosed as Coeliac (at 23). It’s safe to say that it was a comfort dish for me that would be hugely missed.

I realised I’d have to learn to make satay chicken myself but I had no idea where to start. I’d never attempted to make satay chicken myself, let alone attempt to make one that genuinely tasted like the authentic takeout satay chicken that I was craving. But, alas, I opened up Google, typed in ‘takeout satay chicken recipe’ and began testing and tweaking recipes. Now here I am, with a gluten free satay chicken stir fry recipe that takes just like the takeaway satay chicken I used to have from our local Chinese restaurant.

Ingredients:

Note: this recipe makes approximately 6 serves. If you’d like to make less just cut the recipe down. We love making extra serves as then we get to enjoy leftovers for the next couple of days.

  • 2 tbsp oil (any oil is fine – we used vegetable)
  • 2 onions
  • 1 medium sized cauliflower
  • 4 garlic cloves
  • 500g of chicken breast
  • 1 tsp of coriander powder
  • 1 tsp of cumin powder
  • 1/2 tsp of tumeric powder
  • 1/8 tsp of chilli powder (more if you like your food spicy!)
  • 3 tsp of curry powder
  • 1 tsp of salt
  • 1/2 tsp of white pepper
  • 3 tbsp of smooth peanut butter
  • 4 tsp of brown sugar
  • 1 tbsp of honey
  • 2 tsp of gluten free soy sauce
  • 4 tsp of rice vinegar
  • 1/2 tsp of sriracha (again, more if you like your food spicy!)
  • 1 tsp of lemongrass paste
  • 2/3 a cup of coconut milk
  • 1/2 a cup of water

Method

We recommend watching the YouTube video above prior to making the recipe. The video clearly shows how everything should look throughout the whole process.

  1. Dice the onions and set them aside.
  2. Cut the cauliflower into smaller pieces and set it aside.
  3. Cut the chicken into your desired size and set it aside.
  4. Put the oil in a large wok or pan.
  5. Add the onion to the wok/pan and fry the onion for a couple of minutes – until it has started to brown.
  6. Using a garlic press, mince the garlic cloves into the pan.
  7. Fry the garlic in the pan for a minute until fragrant.
  8. Once fragrant, add the chicken to the pan and fry until the chicken is just cooked through.
  9. Add the cauliflower and continue to fry for a couple of minutes.
  10. After a couple of minutes turn the heat down to low and add the coriander powder, cumin powder, tumeric powder, chilli powder, curry powder, salt and white pepper.
  11. Once all of the spices have been added, mix them in, ensuring that the pieces of chicken and cauliflower are coated.
  12. Once coated, add the peanut butter, brown sugar, honey, gluten free soy sauce, rice vinegar, sriracha, lemongrass paste, coconut milk and water to the pan.
  13. Turn the heat up slightly and mix all of the ingredients until they are all combined.
  14. Continue to stir fry the mix while the sauce reduces down and thickens. Typically, this takes 5-10 minutes but continually stir and keep an eye on the mix until it reaches your desired consistency.
  15. When the satay chicken has thickened, turn the heat off. It’s now ready to serve.
  16. Pair the satay chicken with your desired side, for us, that’s rice. We use a Breville rice cooker ** which cooks rice perfectly with little to no effort, all we do is put water and rice into the rice cooker and click start.
  17. Congratulations, you have now successfully made satay chicken. Enjoy!

    ** Note: We use our Breville rice cooker constantly and swear by it, it saves us so much time and effort. Just put dry rice and water into the machine and click start.
